8 cups chopped cabbage
1/4 cup chopped carrot
2 Tbs chopped onion
I use the blender to chop my vegetables.
1/3 cup sugar
1/2 tsp salt
1/8 tsp pepper
1/4 cup milk
1/2 cup mayo
1/4 cup buttermilk
1 1/2 TB white vinegar
2 1/2 TB lemon juice
Blend well and pour over vegetables when ready to serve.
I have found that after chopping the vegetables in the blender, I let them drain in a colander and then squeeze them dry before adding dressing.

I love coleslaw! We had some poppyseed coleslaw in Seattle that was really good. I have been trying to replicate that recipe, but I haven't gotten it quite right. Can't wait to try this one.
