Peach Salsa


Today I made peach salsa for the first time. It went together very quickly, and looks so pretty in the jar. I mixed one bottle of the peach salsa with one bottle of regular salsa and poured it over chicken breasts, then baked it in the oven. I served it over rice, and everybody loved it. Well, not everyone has tried it. Jory isn't home from football practice, and he is the super picky one in the family. Even if he hates it, the vote is still 6 out of 7, so it is a keeper! Here is the recipe:
Peach Salsa
1 cup white vinegar
12 cups chopped, peeled peaches
2 1/2 cups chopped red onion
4 jalapeno peppers, seeded and chopped
2 red bell peppers, seeded and chopped
1 cup loosely packed cilantro leaves
1/4 cup honey
2 cloves finely chopped garlic
1 T ground cumin
3/4 t cayenne pepper
As you peel the peaches, drop them into the pan with the vinegar, this will keep them from going brown. Add all other ingredients and bring to a slow boil. Simmer 5 minutes. Put salsa into hot pint jars, and water bath or steam 15 minutes.
There is no salt in this recipe. I think it could use a touch of salt. Yield: about 11 pints

Crab Boil


Here are my four (five) boys at their first crab boil. With Scott being laid off we have really had to cut back, but we decided to splurge a little on Labor Day. Daken thinks that this should be our new Labor Day tradition. Who doesn't love huge crab legs, shrimp, fresh corn, new potatoes and TONS of BUTTER? Raeni, that is who. She didn't even want to sit at the table "becaused it smelled". And she wouldn't eat the corn or potatoes because they were touching the seafood. I don't think I would have tried it either, when I was her age. We are already looking forward to next Labor Day, and starting to save our money for that delicious seafood!

Hot Dog Buns


Homemade Hot Dog Buns
1 cup milk
1/2 cup water
1/4 cup butter
Mix together in a microwaveable bowl and heat until butter is melted. Let cool to 110 degrees.
2 1/2 cups white bread flour
2 cups whole wheat flour
1 T instant yeast
2 T sugar
1 1/2 tsp table salt
1 egg
Mix 1 3/4 cups white flour, whole wheat flour, yeast, sugar and salt in the bosch or whatever mixer you have. Add wet ingredients, then add egg. Slowly add remaining flour until dough comes together in a ball and no dough remains on the sides of the bowl. At this point you could hand knead it for a while or let the bosch do the job for a minute or two. Let rise until doubled. Divide into 16 pieces. Roll each piece into a thin 6 x 4 rectangle and roll up starting from the long side. Pinch closed. Let rise on stone or baking sheet for 20 - 25 minutes. Bake at 400 degrees for 12 minutes. Brush with butter.
We had these with sloppy joe meat (scott and the kids), I had mine with turkey. They were so soft and yummy!
